    Root Beer Float Popsicles

    Creamy root beer float popsicles are quick and easy to make!  You only need 2 ingredients for these delicious cold ice pops. They're a perfect summer treat! Root beer floats have long been a favorite in our family. They are so simple to serve at a get together.

    Root Beer Floats = Celebration!

    Our friend Angela hosts a back-to-school Root Beer Float party the afternoon of the first day of school. This year she had 200 guests celebrating from pre-school to college age! We love the taste of cold fizzy root beer, and adding the creamy vanilla ice cream takes it up another level. 

    Our root beer float popsicles combine all that goodness into one yummy, chilly bite after another. These pops are the easiest thing to make. All you need is root beer and sweetened condensed milk and you'll get that same refreshing root beer float taste!

    Why flat root beer?

    It's important that you open the root beer and let it sit in the refrigerator for at least two hours, or even over night. When the fizz freezes, it traps the bubbles and causes large ice crystals and a crumbly texture. You want "flat" root beer for this recipe. 

    Popsicle Molds

    Next, you combine the flat root beer and sweetened condensed milk in a blender to emulsify your ingredients. Pour the root beer mixture into popsicle molds, then tap the mold a bit to remove any air bubbles. To freeze, place your mold on a tray or metal pan to keep them level. Then let the popsicles freeze at least four hours or over night. You can remove the popsicles from the molds by running warm water over the molds for just a few seconds, then gently removing them by the sticks. That's all!

    We like these silicon popsicle molds from Amazon. 

    They hold about 3.2 ounces each and have a nice slot to keep your sticks in place. 

    No popsicle mold, no problem. A cup tastes just as good!

    If you don't have molds, no worries, you can pour the root beer mixture into small paper cups. Let them freeze about an hour, then add the sticks. Adding the sticks when the pops are partially frozen, will help the sticks stay in place. Once your Root Beer Float Popsicles are out of the mold, wrap them in plastic wrap, or sandwich bags. This will help keep freezer burn away. Then re-freeze until ready to serve..

    Anyway you freeze them, you'll have a delicious treat with hardly any effort! We love root beer float popsicles and hope you will too!

    Root Beer Float Popsicles

    Creamy Root Beer Float Popsicles are easy to make and so delicious! It's like having a soda fountain in your kitchen! They're the perfect summer dessert.

    Ingredients

    • 2 12 ounce cans root beer
    • ½ 14 ounce can sweetened condensed milk
    Prevent your screen from going dark

    Instructions

    • Open root beer can and set in refrigerator for at least 2 hours or overnight so it’s more “flat” (bubbles cause the popsicle to become crumbly).
    • Combine root beer and sweetened condensed milk in blender and mix until well combined.
    • Pour root beer mixture evenly into popsicle molds. Tap molds gently to remove air bubbles. Insert popsicle sticks, then place molds (or cups) in a metal cake pan or other level surface in the freezer. If using cups, freeze pops for 90 minutes, then add sticks. Freeze at least 4 hours, of overnight.
    • To unmold popsicles, gently run warm water over outside of mold for 3-4 seconds. Pull on silicone to release popsicle, then gently lift out by stick.

      Can you make rootbeer popsicles with just the root beer

        Hi Cathy,
        If you wanted to make root beer popsicle in stead of root beer float popsicles you could omit the condensed milk and just use root beer. I would still suggest you leave the root beer can open and let it go flat to prevent all those bubbles from forming in your popsicles.
