What Goes Into This Recipe
- Sweetened condensed milk. Gives sweet flavor and creamy texture. Sweetened condensed milk is cow’s milk with about 60% of water removed and sugar added.
- Plain non-fat Greek yogurt. Yogurt gives body and creaminess to the lime popsicles recipe. Greek yogurt is strained to remove whey, giving thicker consistency. It also adds protein, calcium, and B vitamins.
- Key lime juice. Key limes are smaller and more yellow than regular lime; they give signature tartness and lime flavor to key lime pie recipes.
- Lime zest. Adds lime flavor and tartness to these lime popsicles.
- Graham crackers. Adds crunch for a “pie experience” to these lime popsicles.
- Sugar. White sugar sweetens the crust.
- Butter. Adds flavor and crispness to crust.
What is a Key Lime?
So, just what is a key lime? These limes are smaller than the usual Persian limes we find in supermarkets across the U.S.
The key lime is small, slightly yellow and has more seeds than its Persian cousin. It’s also a bit more tart and has a slight floral taste.
How to Make this Recipe

This recipe uses only four simple ingredients: fresh or bottled key lime juice, sweetened condensed milk, plain non-fat Greek yogurt, and lime zest. As with key lime pie, when mixed, a chemical reaction causes these ingredients to thicken.
- Just whisk the ingredients together in a bowl until well mixed.
- Then pour the filling mixture into popsicle molds or paper cups.
How to Make Graham Cracker Crust
- For the crust, smash graham crackers and mix them with sugar and butter.
- Spoon graham cracker crust mixture over the lime mixture to finish filling each mold.
- Insert your popsicle sticks, then freeze on a level surface at least 4 hours.
- Once the popsicles are frozen hard, you can remove them from the mold.
Expert Tips
- How to un-mold your popsicles. Dip popsicle mold in lukewarm water for 10 seconds to loosen, then wiggle stick and remove from mold.
- Add sugar and butter. Sugar and melted butter will give a good crunch! Without these ingredients, your crumbs will seem damp and dull.
- Zest limes first. Zest your limes before you juice them. It's difficult to zest once juice is extracted.
