It’s simple, but it’s the best fluffy French toast ever. Our deep fried French toast is like eating a New Orleans beignet for breakfast. The crispy toast is golden brown on the outside and light, airy, and melt-in-your-mouth soft on the inside.
A special recipe shared by our friend Ellie Pocock, we’ve adopted this recipe as THE Christmas morning breakfast at our house. Don’t worry, we love it other times of the year also. In fact, we could eat this deep fried French toast all year long.
French Toast with Egg Whites
French toast batter is usually thin. This is a French toast with eggs whites batter. The whipped egg whites incorporate air into the best French toast batter to create a light, fluffy product.
Ingredients Notes
- Egg whites. Egg whites offer protein and are a binder for other ingredients. They’re a secret ingredient for the best fluffy French toast; whipping the egg whites until stiff incorporates lots of air into the recipe.
- Sugar. Sugar sweetens the French toast batter and tenderizes the French toast recipe.
- Egg yolks. Egg yolks add additional protein, bind ingredients and give flavor to the French toast batter.
- Flour. Flour adds protein, and structure to the French toast batter. It's a secret ingredient for the best fluffy French toast!
- Milk. Milk helps ingredients blend together, adds protein and creates steam to aid the rising process of the batter.
- Baking powder. Baking powder is a leavening agent which help the French toast batter rise and fluff up by creating expanding bubbles of carbon dioxide.
- Salt. Salt enhances the flavor of the recipe.
- White sandwich bread. The sandwich breads forms the base of our scone-like French toast.

How to Make this Recipe
Making the French Toast Batter
- In medium mixing bowl, beat egg whites and sugar together until stiff.
- In a separate bowl, mix egg yolks, flour, milk, baking powder and salt together until just blended (don’t over mix).
- Carefully fold in egg whites.
- Gently stir but don’t stir too much or you’ll loose the “fluff”.
Frying the French Toast
- Cut bread into quarters.
- Dip bread quarter in batter.
- Remove bread from batter and try to keep the fluffy batter around bread.
- Fry in ½ inch oil.
- Turn over to cook on both sides until golden. Remove from oil and place on paper towel lined plate to absorb oil.
Best Bread to Make French Toast
The best bread for French toast is day old bread, or slightly stale (dried out) bread. In France this dish is called "pain perdu" or "lost bread." Day old bread was brought back to life by soaking it in a custard and grilling it. It's thought that drier bread soaks up the custard better.
For our special deep fried French toast, we like simple white sandwich bread. The bread is cut into quarters, then magically transformed into this delicious dish.
Expert Tips
- Carefully separate the eggs. You don’t want any yolk to fall into your whites or they won’t whip properly.
- Don't over beat batter. If you stir/beat the batter too much, the French toast will be tough. Too much beating will also cause your egg whites to fall which means you'll lose the fluffiness.
- Fry the bread in vegetable oil at 375 degrees. Once the oil is heated, drop a small amount of batter to test the oil. If it turns golden brown, you're ready to cook.

For traditional French toast, many varieties of bread are good. Day old, or stale bread, soaks in the custard/batter better than fresh bread. In this recipe, we recommend using classic white sandwich bread. It works well in the fluffy batter and creates perfect light and airy French toast.
Simply add one teaspoon cinnamon to your French toast batter for some extra depth of flavor!
Adding flour to the custard makes it more like a batter which makes it fluffy and delicious.
How to Serve this Recipe
Be ready to eat the French toast immediately. It's best served right off the grill. We like to have everyone seated while we're making the first batch. One cook continues to cook throughout the meal until everyone has been served. You want to eat them warm!
We eat this deep fried French toast sprinkled with powdered sugar, then covered in sliced strawberries and whipped cream. You could use any favorite syrup too. There is no wrong way to eat this yummy dish.
Here are a few topping ideas: Marshmallows, chocolate shavings, chopped peppermint bark, chocolate chips, toffee bits, sprinkles, coconut, slivered almonds, chopped pecans, berries, bananas, apples, peaches, powdered sugar, whipped cream, Nutella, lemon curd, any syrup or jam.
Storage Notes
This French toast does not store well. Re-heating in the microwave will make it tough and soggy.
If you have some leftovers, wrap them individually in plastic wrap and pop in a zip loc bag. To re-heat, put them in the oven on a baking sheet at 300 degrees for 3-4 minutes. You can also try an air fryer which will definitely have better result than the microwave. Our best suggestion is to eat it fresh!

For French Toast
- 2 egg whites
- 1 Tablespoon sugar
- 2 egg yolks
- 1 cup flour
- ⅔ cup milk
- 1 teaspoon baking powder
- ½ teaspoon salt
- 4 pieces white sandwich bread
- oil for frying
For Topping
- 8 ounces whipping cream
- 2 Tablespoons sugar
- 1 teaspoon vanilla
- 1 pound strawberries sliced
- powdered sugar
Instructions
For French Toast
- In medium mixing bowl, beat egg whites and sugar together until stiff.
- In a separate bowl, mix egg yolks, flour, milk, baking powder and salt together until just blended (don’t over mix). Carefully fold in egg whites (don’t stir too much or you’ll loose the “fluff”)
- Cut bread into quarters (triangles) and dip in batter. Fry in ½ inch oil, then flip and fry on other side. Remove from oil and place on paper towel lined plate.
For Topping
- Whip cream with sugar and vanilla until soft peaks form. Serve immediately with powdered sugar, whipped cream and strawberries, or syrup.

My mother’s French toast. Wo n derful. She got recipe from Drake Hotel or Pope’s cooking school in Chicago. I couldn’t get my whites to get stiff -only foamy.
