Black and White Bean Salad
Ingredients
- 1 15 ounce can white beans, rinsed and drained
- 1 15 ounce can black beans, rinsed and drained
- 1 cup fresh red pepper diced
- 1 cup fresh yellow pepper diced
- 1 cup fresh green pepper diced
- ½ cup green onions thinly sliced
- 1 ½ cups fresh tomato chopped
- For Dressing
- ¾ cup salsa
- ½ cup red wine vinegar
- ¼ cup fresh cilantro chopped
- 1 fresh jalapeno seeded and chopped
- 1 teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Combine white and black beans and chopped tomato in a large bowl. Add red, yellow and green peppers, and sliced green onions; stir gently.
- To make the dressing, combine salsa, vinegar, cilantro, jalapeno, salt and pepper in a small bowl, stir. Pour over bean mixture and toss gently.
