    These rice krispie treats with marshmallow fluff are my go-to treats for taking to potlucks and sharing! They are the quintessential American treat, and this recipe is next level, we're talking gourmet rice krispie treats here. These are your classic rice krispie treats made with marshmallows, butter, and rice krispies cereal, but then we add in extra mini marshmallows, marshmallow cream (a.k.a. marshmallow fluff), plus a little vanilla and salt that puts these over the top.

    They're super soft and buttery and honestly, there are few things better than a soft, gooey, buttery rice krispie treat. And on the flipside, is there anything worse than a hard, cut-up-the-roof-of-your-mouth (you know what I'm talking about), flavorless rice krispie treat?

    I'm obsessed with the level of marshmallow in these. Not just double the marshmallow, but TRIPLE! And whether you spell it as rice krispie treats, rice krispy treats, or rice crispy treats, I guarantee these are the best.

    Plus, I love a good pan treat, you know, the ones you just have to cut into bars. So if you want some more of those try our s'mores rice krispie treats, frosted sugar cookie bars, or our brownies with cream cheese frosting!

    Ingredient Notes

    • Mini Marshmallows. Mini marshmallows are melted down with the butter and help bind the rice Krispie treats together. We also add extra mini marshmallows straight into the mix for extra bursts of marshmallow.
    • Butter. You can use salted or unsalted butter. Butter adds incredible flavor and tenderness.
    • Marshmallow Fluff. Marshmallow fluff, sometimes called marshmallow cream or crème, marshmallow spread, or marshmallow stuff. My store usually cares the Jet-Puffed marshmallow crème, but any brand will do. Stores usually carry them in 7 ounce (you need two) or 13 ounce containers, if yours if slightly off, don't worry, you don't have to make any adjustments.
    • Vanilla. A little bit of vanilla ups the flavor here, giving them an extra bakery flavor.
    • Salt. Salt enhances the flavors and helps balance out the sweetness.
    • Rice Krispies. You'll need crisped rice cereal, Kellogg's Rice Krispies is a common one, but any off-brand will work perfectly in these marshmallow fluff rice krispie treats.

    How to Make this Recipe

    1. Melt Butter and Marshmallows. In a large pot, melt your butter completely over medium heat. Then add your mini marshmallows (don't forget to set aside 3 cups of mini marshmallows for later!). Stir the marshmallows and butter together until completely mix.

    1. Remove from Heat. Remove the pan from the heat and stir in the salt and vanilla. Then stir in the marshmallow fluff. Stir in the marshmallow fluff until it is mostly smooth, a few chunks are totally fine.
    2. Add Cereal. If your pot is large enough you can add the Rice Krispies cereal straight into the pot. If your pot is not large enough, pour your cereal into a very large mixing bowl and then pour your melted marshmallow mixture over top of the cereal. Add your reserved mini marshmallows in and stir until the cereal is completely coated.

    1. Pour into pan. Grease a deep 9x13-inch pan or line with parchment paper. Scoop your marshmallow coated cereal into the pan. Grease your hands with nonstick cooking spray or butter and gently pat down the cereal treats until even in the pan.
    2. Cool. Cool the rice Krispie treats with marshmallow fluff for at least 30 minutes or longer until cutting into.

    Note: You'll see in my video I add the marshmallow fluff after melting the marshmallows. I used to always do it this way. More recently, I've started adding the marshmallow cream to the melted butter and marshmallows-it's easier and I haven't noticed a difference in texture.

    Frequently Asked Questions (FAQs)

    Is marshmallow cream the same as marshmallow fluff? What is another name for marshmallow fluff?

    Marshmallow fluff is also called marshmallow cream, marshmallow crème, marshmallow stuff, marshmallow spread, or sometimes marshmallow paste.

    These names vary based on the brand or where you live.

    Is melting marshmallows the same as marshmallow fluff?

    No, melting marshmallows is not the same as marshmallow fluff. Marshmallow fluff is light and spreadable and made without gelatin, keeping it soft and creamy. Marshmallows have gelatin in them to help them set and keep their shape.

    Can I use marshmallows that are hard?

    Hard marshmallows are old marshmallows! Stale marshmallows and rice krispies don't suddenly taste better when made into treats! Stale ingredients = stale rice krispie squares. Just do it right and use fresh ingredients.

    Why are my rice krispie treats hard?

    Make sure your stove isn't on too high of a heat of you run the risk of burning the marshmallows. Burning the marshmallows can leave a bad taste and can make your rice krispie treats harder.

    Can I halve this recipe?

    Absolutely. I love how big and thick these rice krispie treats with marshmallow cream are, but they are BIG! This recipe makes a very thick 9x13 inch pan of treats. You can easily halve this recipe and put it in an 8x8 or 9x9-inch pan or halve it put it in a 9x13 for a thinner rice krispie treat.

    Variations of this Recipe

    Add Color, Shape, and Decorations

    I love decorating these marshmallow fluff rice krispie treats for different holidays. You can add food coloring to the melted marshmallow to color them for Valentine's Day, Halloween, Christmas, or just for fun.

    You can also use cookie cutters to cut them out, I recommend spreading the rice Krispie treats thinner, like on a baking sheet, if you plan on cutting them out with cookie cutters.

    Give them a drizzle of chocolate and some festive sprinkles, like I did with these cute pink Valentine's Day rice krispie treats.

    Add Mix-ins

    These marshmallow fluff rice krispie treats are versatile and easy to add your own spin on! Stir in your favorite shopped candy like chocolate chips, butterscotch chips, toffee or heath bars, Twix, or Reese's! Try out our M&M Rice Krispie Treats.

    You can also add a few heaping spoonfuls of peanut butter, Nutella, or cookie butter in with the melted marshmallow and then drizzle a little over top! Sprinkle a little flaky sea salt over top too and you'll be in heaven.

    Use Flavored Marshmallows

    We like classic marshmallows and marshmallow cream in this recipe. If you're looking for a fun way to mix up the flavor, you could try swapping the marshmallow fluff or marshmallows for flavored ones! I often seen strawberry marshmallow fluff or fruity marshmallows at my grocery store.

    Brown the Butter

    If you really want to level up your rice krispie treat game, you can brown the butter on the stove before you start mixing in the marshmallows. If you've never browned butter before, don't worry, we've got a whole tutorial and a video for you on How to Brown Butter. Browning butter adds rich toffee notes to the rice krispies, it's subtle but it really make them incredible. Our brown butter chocolate chips cookies are by far our most popular recipe!

    We've got a couple tips for you if you decide to brown the butter before using it:

    1. Reduce the salt. Browning the butter will add salty flavor already, so reduce the slat to ½ teaspoon.
    2. Add 2 extra tablespoons of butter. You lose some moisture when you brown the butter, so adding a little extra butter will keep these buttery and soft!

    Cereal Variations

    This rice Krispie treat with marshmallow fluff uses rice krispies cereal. However, there's no reason you couldn't swap those out for another kind of cereal! Replace the cereal cup for cup with another. If using a larger cereal, like cocoa puffs or something similar, add an extra ½ cup of cereal.

    Here are a couple cereal ideas to try in place of rice krispies:

    Storing this Recipe

    Let these marshmallow fluff rice krispie treats cool completely before slicing into or covering. It will take about 30 minutes. Once cool, keep them covered with plastic wrap or aluminum foil to maintain their soft, gooey texture! If left uncovered for extended periods of time they'll start to dry out.

    These are best eaten within 3 days. However, if covered properly, they will stay fresh at room temperature for longer.

    Can you freeze rice krispie treats?

    Yes! Be warned that they won't be quite as gooey after being frozen, but still good.

    To freeze these rice krispie treat with marshmallow fluff, first, cool them completely. If they are even a little bit warm the heat will create condensation make them soggy and freezer burned.

    You can freeze them two different way: flash freeze or individually wrap. To flash freeze them, cut them into squares and place on a baking sheet so they aren't touching. Freeze for 1-2 hours and then bag them up. By freezing before bagging them they shouldn't stick together.

    To individually wrap, which is my usual method, wrap each rice krispie treat square in plastic wrap, wax paper or parchment paper. Then place in a gallon freezer bag or in an airtight food storage container in the fridge.

    Thaw before eating. These are best if eaten within a month of freezing.

    Ingredients

    • two 10-ounce bags mini marshmallows about 12 cups, divided
    • 10 tablespoons butter
    • 1 teaspoon vanilla
    • 1 ½ teaspoons salt
    • one 12-ounce box Rice Krispies cereal about 12 ½ cups
    • 2 7-ounce containers of marshmallow fluff about 4 ½ cups (or one 13 ounce container)
    Prevent your screen from going dark

    Instructions

    • In a very large saucepan over low heat (see notes) melt butter completely. Once melted, add in 9 cups of mini marshmallows (set aside 3 to mix in later) and coat in butter. Keep stirring until butter and marshmallows are completely melted, then remove from heat.
    • Add in salt, vanilla, and marshmallow fluff, and mix until the marshmallow fluff is completely incorporated. If you have a few small chunks of marshmallow fluff that's okay.
    • Stir in the Rice Krispies cereal and reserved 3 cups of mini marshmallows until completely coated.
    • Line a 9x13 pan with parchment paper or foil and spray with cooking spray. Pour all of the mixture into the 9x13 pan. Using the back of the spoon evenly distribute the mixture throughout the pan. Spray your hands with cooking spray (so the mixture doesn't stick to your hands) and gently press the mixture down so the treats have a smooth surface. Let cool and set. Then slice and enjoy!

    • If you don't have a very large sauce pan, you can either melt the butter and marshmallows down in the largest saucepan you have and then pour them into a large mixing bowl or you can microwave them in a large microwave-safe bowl and then into a large mixing bowl to mix in the cereal.

      I have tried everything I can think of including different brands of marshmallows but cannot get more than 8 cups out of 2 10 ounce bags the recipe is delicious with me not Following the recipe exactly I bet they are even better when I use the correct ratios.

      Oops, I didn’t see in the instructions when to add the salt and vanilla but I assume right about when you’re melting the butter and the marshmallows?
