    Crispy Garlic Parmesan Roasted Chickpeas

    Crispy garlic parmesan roasted chickpeas are an easy and delicious homemade snack! Packed with protein, they are a healthier alternative to the chips hiding in your cupboard. Eat them alone or try them on top of a salad or soup!

    Does anyone else turn into a snack monster when 3 o’clock rolls around? No? Just me? My body works like clockwork, the clock strikes 3 p.m. and I am ravenous. These crispy chickpeas are one of my current obsessions.They’re a much healthier alternative to whatever I usually reach for when the midday munchies strike. They’re the perfect balance of carbohydrates, proteins, and fats and are packed with flavor. Get snacking!

    Ingredients

    • 1 can chickpeas
    • 2 tablespoons olive oil
    • ¼ cup powdered parmesan
    • ½ teaspoon salt
    • ½ teaspoon garlic powder
    • 1 teaspoon dried parsley
    Prevent your screen from going dark

    Instructions

    • Preheat oven to 350 degrees Fahrenheit. Drain and rinse chickpeas. Spread chickpeas out over a paper towel and pat dry. The dryer the chickpeas the crispier they’ll be.
    • Remove the outer skins of the chickpeas. You can skip this step, but you’ll get a crispier chickpeas if you don’t!
    • In a bowl, toss chickpeas with olive oil, Parmesan, and seasonings. Bake for 43-46 minutes.
