Instructions
Brownies
Line 9x13-inch pan with parchment paper for easy removal from pan later. Make brownies in a 9x13-inch pan according to directions on mix or your recipe.
Cool brownies completely before frosting.
Mint Buttercream Frosting (read all directions before proceeding)
In medium mixing bowl, cream shortening and butter with electric mixer. Add vanilla and mint extracts.
Gradually add sugar, one cup at a time, and salt, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry.
Add milk and food coloring (see notes), and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use. You'll be surprised how much color comes out of the smallest bit of food coloring.
Spread mint buttercream over top of cooled brownies in an even layer. Place in refrigerator or freezer for one hour before adding layer of chocolate frosting.
Chocolate Fudge Frosting
In a large, microwave-safe bowl, heat cream and butter in microwave until hot. Add chocolate chips to mixture and let sit for 1 minutes. Using your hand mixer on low, mix chocolate, chips and hot cream and butter until smooth and melted.
Add powdered sugar with electric mixer. Beat until it holds its shape.
Frost brownies with chocolate frosting when mint frosting covered brownies are COLD but chocolate frosting is still WARM. Chocolate frosting will set up like fudge when cooled.
Chill brownies until chocolate frosting is set. It's easier to cut these brownies when they are chilled with a thin, sharp knife.
