This refreshing Mediterranean cucumber salad has crunchy cucumber tossed with cherry tomatoes, red onion, and feta chunks, with a zesty lemon and herb dressing. It takes less than 10 minutes to put together and stays fresh for days!
1 tablespoonfresh lemon zestpacked (zest of 3 lemons)
¼cupolive oil
1tablespoonfresh basilfinely chopped
1tablespoonfresh dillfinely chopped
½-1teaspoonsea salt
¼-1/2teaspoonfreshly ground black pepper
Instructions
Juice and zest your lemons. Mix it together with all the dressing ingredients. Set aside.
Cut cucumbers in half lengthwise and remove seeds. (No need to peel if using thin-skinned English cucumbers.) Cut into approximately ¼ inch cubes.
Slice tomatoes in half, then finely dice the red onion.
Add all salad ingredients to a bowl and toss together with the dressing. Best served chilled. Store covered in the refrigerator for up to 4-5 days.
Notes
Substituting fresh for dried herbs. Fresh herbs are going to give the best flavor in this salad, however if you need to substitute fresh herbs for dried, you can substitute 1 teaspoon of dried herbs for 1 tablespoon of fresh.What kind of tomatoes should I use for Mediterranean salad? I usually use grape or cherry tomatoes. However, Roma or heirloom tomatoes are just fine too! I say use what you have and whatever is in season! If the tomatoes contain a lot of extra juice, I recommend removing the seeds before adding them to the salad or your salad will become quite watery.
