½cupfresh or bottled key lime juice(or regular fresh lime juice)
2teaspoonsfresh lime zest
1drop green food color(optional)
For Crust
½cupgraham cracker crumbs(4 whole graham cracker sheets)
1Tablespoonwhite sugar
2Tablespoonsmelted butter
Instructions
Mix sweetened condensed milk, yogurt, key lime juice and lime zest together in a bowl with a whisk (you ca also use a blender). Whisk until well blended. Set aside.
Smash graham crackers in a plastic bag with a rolling pin or other heavy tool (you can also use a food processor).
In a small bowl mix together graham cracker crumbs, sugar and butter with a fork until blended.
Using a funnel, pour popsicle mixture into popsicle molds. Until within ¾ inch of top (this also works well in paper cups.)
Spoon in graham cracker crust mixture to finish filling each mold. Press crumbs down slightly. Insert Top of mold and/or popsicle sticks.
Freeze on a level surface at least 4 hours.
Notes
How to un-mold your popsicles. Dip popsicle mold in lukewarm water for 10 seconds to loosen, then wiggle stick and remove from mold.
What if I don't have a popsicle mold? You could a paper cup to mold your lime popsicles. Wait until the mixture is partially frozen and insert a popsicle stick. Continue freezing until frozen hard, then remove from cup.
