Cubed avocados, mandarin orange segments, tomatoes, green onion, cilantro, lime and spices combine to make a refreshing dip to serve with tortilla chips or over chicken or fish.
Peel, section and slice oranges into small bits. Peel and cube avocados.
Zest and juice the limes. Cut grape tomatoes into quarters.
Trim tops off green onions, then slice and chop all green and white parts. Chop cilantro.
Mix lime juice, lime zest, Tabasco, salt and pepper together in a medium bowl. Add green onions and cilantro. Set “sauce” aside.
Combine oranges, avocados and tomatoes in a medium sized serving bowl. Pour “sauce” over vegetables. Gently mix. Serve with tortilla chips.
Notes
The avocadoes, tomatoes and oranges will break down as they are gently stirred or sitting a while. This will give you more juice. Although traditional guacamole is smashed, we invite you to try this cubed guacamole to see what you think. We love our smashed guac, but this is a great variation.
