This easy avocado Caesar dressing has all the flavor of a classic Caesar dressing but with the bonus of avocado! It’s naturally healthy and low in calories (only15 calories a tablespoon!). Pair it with crisp, cold romaine lettuce, fresh parmesan cheese, and croutons, for refreshing avocado Caesar salad.
In a food processor or a high-speed blender, place all of the ingredients for the avocado Caesar dressing. Blend until smooth.
Use this dressing for salads, chicken salad sandwiches, veggie dip, or even chicken lettuce wraps.
To Assemble an avocado Caesar salad, chop and wash romaine lettuce. Toss lettuce with dressing and parmesan cheese. Top with more parmesan and croutons.
Optional: If you'd like top with extra ingredients like cooked bacon, sliced avocado, tomatoes, and grilled chicken.

Makes ¾ cup dressing (6- 2 tablespoon servings)Storing this Recipe. This dressing should be stored in an airtight container in the refrigerator. It’s best used within a week. The top layer may of the dressing may turn brown and oxidize as it sits in the fridge. You can scrape off the top layer as needed.
