Cut cucumbers in half lengthwise and remove seeds. (No need to peel if using thin-skinned English cucumbers.) Cut into approximately ¼ inch cubes.
Slice grape tomatoes in half lengthwise. Cut Buffalo mozzarella into approximately ¼ inch cubes. Seed & finely chop jalapeño.
Mix cucumbers, tomatoes, mozzarella and jalapeno with dressing. Cover tightly and let ingredients combine 3-4 hours before serving. Toss gently before serving.
