This grapefruit mint kale salad is so refreshing I swear I heard an audible sigh of deliciousness from my husband when I served it to him for the first time. It has a base of tender and crispy (a contradiction, I know, but it’s true!) kale, sliced almonds, cool mint, and segmented grapefruit tossed with a light honey lime dressing. This is the BEST broccoli salad ever! I love that it never gets soggy, you can make it in advance and the salad doesn’t wilt like most green salads. And the salad gets better as it marinates in the dressing and other flavors! This salad is full of broccoli crowns, broccoli slaw, chopped sweet apple, dried cranberries, sunflower seeds, green onions, crispy bacon, cheddar cheese, and a lightened up creamy dressing.
I’ll let you in on a little secret: I don’t really like pasta salad. This one is different. I don’t just like it, I LOVE it. It’s so lemony delicious. I think it’s pasta salad perfection!
